- 1 medium onion, chopped
- 1/4 c. chopped green pepper
- 4 c. water, divided
- 1 (15 oz.) can Great Northern beans, rinsed and drained
- 1 (6 oz.) can tomato paste
- 1 (14 oz.) can diced tomatoes, undrained
- 2 to 4 tsp. chili powder
- 1 tsp. salt
- 1/2 tsp. pepper
Directions

1In large saucepan, cook the onion and green pepper in 1/2 cup water until tender.

2Add beans, paste and tomatoes.

3Stir in chili powder, salt, pepper and rest of water.

4Bring to a boil.

5Reduce heat.

6Cover and simmer for 20 minutes.

7Serves 7 (1 cup) servings (low-fat).
