Easy Make Brunch Casserole

Ingredients
- 10 eggs
- 1 tsp. baking powder
- 1 pt. creamed small curd cottage cheese
- 1 lb. grated Jack cheese
- 2 (4 oz.) cans diced green chilies
- 1/2 c. all-purpose flour
- 1/2 tsp. salt
- pepper to taste
- 1/2 c. melted butter or margarine
Directions

1Beat eggs until fluffy.

2Add all remaining ingredients except diced chilies.

3Blend until smooth.

4Stir in chilies.

5Pour into greased 13 x 9 x 2-inch dish and bake at 350° for 35 to 40 minutes until puffy and brown.

6May be served hot or cold.

7May be made night before and refrigerated (covered with wrap or foil).

8Set out 10 minutes before baking.

9Serve with salsa sauce on the side. This is a good recipe for camping, too.

10Use a heavy covered Dutch oven to bake over fire.

11Cut recipe in half for smaller group.
