- 1 c. green pepper, chopped
- 1 c. onion, chopped
- 3 c. cut up chicken (bite size pieces)
- 1 to 2 Tbsp. oil
- 1 can corn, drained
- 1 can chicken broth
- 1 1/2 to 2 c. salsa (temperature your choice)
- 2 c. uncooked brown Minute rice
- grated Cheddar cheese
Directions

1Saute pepper and onion in oil until tender-crisp.

2Add chicken; cook, stirring occasionally, until chicken is no longer pink (8 to 10 minutes).

3Add remaining ingredients; bring to boil. Cover, lower heat and simmer 5 minutes.

4Remove from heat, let stand 5 minutes and stir.

5Add cheese to cover top of chicken. Replace lid; let stand until cheese has melted.
