Easy Mini Frittata

Ingredients
- 6 large eggs
- 1/4 cup milk
- 1 cup chopped zucchini or yellow squash
- 1/2 cup chopped onion
- 1/2 cup cooked crumbled bacon or real bacon bits
- 1 cup shredded cheddar cheese
- 1 tsp chopped garlic
- 1 tbsp Italian seasonings
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- can cooking spray
Directions

1Heat oven to 350

2Add eggs and milk to a large bowl and scramble well with a whisk

3Chop a medium zucchini or yellow squash depending on which one you like and add to the bowl

4Chop a small onion and add to the bowl

5Add 1/2 cup cooked crumbled bacon.

6I like to use the real bacon bits.

7It's easier.

8Add 1 cup of shredded cheddar cheese

9Add the garlic.

10You can leave it out if you don't like garlic.

11I personally like it.

12Add the Italian seasonings

13Add the salt and pepper

14Stir all well

15Spray a muffin pan with cooking spray

16Add evenly to the muffin pan

17Cook at 350 for 30 minutes

18After you take out of the oven flip the frittatas out, if any stick slightly I use a butter knife to trace around the inside of the muffin pan and they usually fall right out.

19Cool for 5 minutes and enjoy.

20This is really easy to do and they taste great.

21Everything doesn't have to be exact and you can mix or substitute other ingredients as long as you keep the eggs, milk, and cheese.

22Left over veggies or meat work fine too.
