Ingredients
- 3 medium eggplants
- 3 large onions, finely chopped
- 2 lb. ground lamb or beef
- 1/2 c. dry red wine
- 1/4 tsp. cinnamon
- 6 Tbsp. flour
- 4 eggs, beaten until frothy
- 2 c. Ricotta cheese
- 1 c. freshly grated Parmesan cheese
- 1 c. butter or margarine, divided
- 3 Tbsp. tomato paste
- 1/2 c. chopped parsley
- freshly ground pepper to taste
- 1 qt. milk
- nutmeg to taste
- 1 c. fine bread crumbs
Directions

1Peel eggplants and slice 1/2-inch thick.

2Brown slices quickly in skillet in 4 tablespoons butter or oleo (set aside).

3Heat 4 tablespoons butter or oleo in skillet.

4Saute onions until light brown.

5Add ground meat and cook 10 minutes.

6Combine tomato paste with wine, parsley, cinnamon, salt and pepper.

7Stir into meat. Simmer, stirring frequently, until all liquid is absorbed.

8Remove from heat.
