Ingredients
- 2 lbs large sweet onions, chopped
- 2 celery ribs, chopped finely
- 1 medium red bell pepper, chopped
- 1 -2 tablespoon melted butter
- 3/4 cup apple cider vinegar
- 1/4 cup water
- 2 tablespoons brown sugar (or to taste)
- 1 teaspoon celery seed
- 1/4 teaspoon salt (or to taste)
Directions

1Saute onions, celery and red bell pepper in the butter in a Dutch oven for about 15 minutes or until tender (do not brown).

2Add in vinegar and remaining ingredients to the mixture; bring to a boil, reduce heat and simmer uncovered for about 20 minutes.

3Store in refrigerator for 1 day before using.

4Serve chilled or at room temperature.
