Easy Onion Soup

Ingredients
- 4 large onions
- 2 cloves garlic
- 1/2 c. butter
- 5 c. chicken broth
- 1/2 c. sherry
- 4 thick slices French bread
- 4 oz. Swiss or Gruyere cheese, sliced
- grated Parmesan cheese
Directions

1In covered saucepan, cook onions and garlic in butter over low heat for 20 minutes.

2Add stock and wine with 1/4 teaspoon pepper. Bring to boiling.

3Cover and simmer for 15 minutes.

4Toast bread. Top each with sliced cheese.

5Sprinkle with Parmesan.

6Broil for 2 minutes, or until cheese melts.

7Ladle soups into 4 bowls.

8Top each with a toast slice.

9Makes 4 servings.
