Easy Orange Cake

  • 2 whole Oranges, Divided
  • 6-3/8 ounces, weight Butter, Melted
  • 1-1/2 ounces, weight Butter, Extra (for Icing)
  • 3 whole Eggs
  • 1 cup Sugar
  • 1-1/2 cup Self-Rising Flour
  • 2-1/2 cups Icing Sugar
  • 3 Tablespoons Freshly Squeezed Orange Juice
  • 3 teaspoons Orange Zest

    (One orange is for the cake, and one is for the icing.)

    This is so easy because you can make it in your blender.

    Preheat oven to 180C/350F. Spray a large loaf tin with non-stick cooking spray or brush with some melted butter.

    Chop one orange - yes, skin and all - into chunks and place into your blender jug with the melted butter, the eggs, and the sugar. Blend on high until well combined. Pour this into a large bowl with the flour and stir with a wooden spoon until combined.

    Pour the batter into the prepared loaf tin and bake in the oven for 50 minutes. Allow to cool for five minutes in the tin, then turn out onto a wire rack to cool completely.

    Icing:

    Using a fine grater or zester, remove the zest from the second orange. Combine the icing sugar and the extra 40g of butter in a bowl and add enough freshly squeezed juice to achieve the desired consistency. You can add the zest to the icing, or sprinkle it on top after you've iced the cake. Whatever you prefer.

    Note: I tried this with a lemon instead of an orange and it was delicious.
