Ingredients

  • 10 oz Japanese Udon Noodles
  • 2 clove minced garlic
  • 1 small finally chopped red onion
  • 4 eggs
  • 2 tbsp sesame oil
  • 2 tbsp minced ginger
  • 1 lime
  • 2 tbsp ketchup
  • 1 tbsp oyster sauce
  • 2 tbsp fish sauce
  • 2 tbsp white sugar
  • 4 tbsp brown sugar
  • 2 tbsp soy sauce or amino acid
  • 4 tbsp peanut butter or peanuts

Directions

    Boil noodles for 10 minutes.

    Remove from heat, drain and replace hot water with cold water.

    Set to side.

    In a large hot skillet, add oil and eggs.

    Scramble eggs until cooked.

    Add all other ingredients (minus lime) in skillet and cook for additional 10 minutes or until onions and garlic are soft.

    Stir frequently.

    Drain noodles and add to skillet.

    Stir in and cook until noodles are hot, about another 7 minutes.

    Plate noodles and squeeze lime juice over your meal.
