Easy Peach-Cheese Pie

  • 3/4 c. all-purpose flour
  • 6 Tbsp. firmly packed brown sugar
  • 1/3 c. margarine
  • 2 tsp. grated orange rind
  • 2 to 3 Tbsp. cold water
  • 1 (8 oz.) pkg. cream cheese
  • 1/2 c. powdered sugar
  • 1 tsp. vanilla
  • 1 (9 oz.) container whipped topping, divided
  • 1 (16 oz.) can peaches, drained, or 2 c. fresh sliced peaches

    Blend together flour and brown sugar.

    Cut margarine and orange rind into flour mixture.

    Stir in enough cold water to form mixture into a ball.

    Pat dough into a 9-inch glass pie plate. Microwave at Medium 3 to 4 minutes.

    Crust will puff up and will settle down.

    Cool before filling.
