- 4 boneless skinless chicken breasts
- 12 cup buttermilk
- 1 cup baking mix
- 12 cup finely chopped pecans
- 1 teaspoon paprika
- 12 teaspoon salt
- 12 teaspoon creole seasoning (Tony C.'s)
- 12 cup butter or 12 cup margarine, melted

1Preheat oven to 350.

2Spray 13x9 or larger pan with cooking spray.

3Set aside.

4Place chicken breasts between two pieces of plastic wrap and pound lightly, simply to even out the thickness.

5(Don't pound thin, just kind of even out the meat).

6Combine dry ingredients in a shallow bowl, stirring well.

7Pour buttermilk in another shallow bowl.

8Dredge chicken first in buttermilk, then in pecan mixture.

9Place on prepared pan.

10Drizzle chicken with melted butter.

11Bake for 50 minutes, or until chicken is done.
