- 1 1/2 Tbsp. vegetable oil, divided
- 2 eggs, beaten
- 1 c. diced, fully cooked ham
- 1 c. finely chopped fresh mushrooms
- 1/2 c. thinly sliced green onions
- 3 c. cooked brown rice, chilled
- 1 Tbsp. reduced-sodium soy sauce
Directions

1Heat 1/2 tablespoon oil over medium heat in large skillet or wok.

2Add eggs; cook without stirring until set.

3Invert skillet over baking sheet to remove cooked eggs; cut into 1 1/2 x 1/2-inch strips and set aside.
