  • 25 saltine crackers, finely crushed
  • 2 Tbsp. chopped fresh parsley
  • 1 clove garlic, minced
  • 2 eggs, lightly beaten
  • 1/4 cup oil, divided
  • 4 boneless pork blade steaks (1 lb.), pounded to 1/4-inch thickness
  • 1-1/2 cups mixed red, yellow and green pepper strips Target 1 pkg For $2.99 thru 02/06
  • 1/2 cup onion slices

    Mix cracker crumbs, parsley and garlic in shallow dish or pie plate.

    Dip pork in eggs, then in crumb mixture, turning to evenly coat both sides of each steak; set aside.

    Heat 2 tsp.

    of the oil in medium nonstick skillet.

    Add peppers and onions; cook and stir 4 min.

    or until crisp-tender.

    Remove from skillet; cover to keep warm.

    of the remaining oil in same skillet.

    Cook pork, in batches, 4 min.

    on each side or until cooked through (160F), adding remaining oil as needed.
