Ingredients
- 1 1/2 lb. veal round steak or cutlets (1/2-inch thick)
- 2 eggs, beaten
- 2 Tbsp. water
- 2 c. packaged instant mashed potatoes
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. salt
- 1/3 c. Crisco
Directions

1Cut meat into 6 serving size pieces; pound to 1/8-inch thickness.

2Cut small slits in fat edges to prevent curling. Combine eggs and the water.

3Stir together dry potatoes, cheese and salt.

4Dip each piece of veal in egg mixture, then in potato mixture; repeat dipping to give each a second coating.

5In skillet, brown veal in hot Crisco for 3 minutes.

6Turn carefully and brown second side about 3 minutes.

7Serve with lemon wedges, if desired.

8Makes 6 servings.
