Easy Shrimp Bisque

Ingredients

  • 1/3 lb of large p&d shrimp
  • (apx. 10 shrimp)
  • 1 tbls light butter
  • 2 cans of tomato bisque
  • 2% milk
  • fat-free 1/2 & 1/2
  • 1/4 tsp Italian seasoning blend
  • 1/2 tsp cajun seasoning blend
  • 1/4 tsp white pepper
  • 2 tbls of sliced green onions
  • (I slice & freeze these in bunches)

Directions

    In a medium pot, melt 1 tbls of light butter. Then add the sliced green onions and let simmer for a few minutes.

    Add all ingredients except shrimp. While this begins to simmer, quickly dice the shrimp into 1/3 inch chunks and add to the bisque. When the shrimp starts to get red and boil the bisque is done.
