Easy Spanish Rice

- 1 cup Long Grain White Rice
- 1 whole Onion, Medium, Chopped
- 2 Tablespoons Butter Or Margarine
- 1 can (14.5 Oz. Can) Mexican Stewed Tomatoes
- 1 can (10 Oz. Can) Mild Diced Tomatoes And Green Chilies (I Use Rotel)
- 2 dashes Salt And Pepper, Or To Taste
- 1/2 cups Cheese (of Your Preference)

1Cook rice according to package directions.

2Saute the onion in the butter or margarine in a skillet over medium heat till softened. Put Mexican stewed tomatoes in the blender to cut down the chunks to smaller sizes. Add to the skillet. Then add the Rotel (tomatoes and chilies). Mix well. Then add the rice and mix again. Add your salt and pepper to taste.

3Put in a casserole dish and bake at 350°F for 30 minutes. Add cheese during the last 5 minutes. Serve.
