- 1 cup all-purpose flour
- 1/4 cup milk
- 2 eggs
- 1/2 teaspoon ground nutmeg
- 1 pinch freshly ground white pepper
- 1/2 teaspoon salt
- 1 gallon hot water
- 2 tablespoons butter
Directions

1Bring water to a boil.

2Mix flour, salt, pepper, and nutmeg.

3Beat eggs, add milk to eggs.

4Stir egg mixture into flour mixture. Stir until smooth.

5Using spatzle maker, colander or cheese grater, drop dumplings into water. Cook 5-7 minutes. Fish spatzle out with a slotted spoon and drop into ice water to stop cooking.

6Saute spatzle in butter or olive oil and serve.

7Great with grated cheese too!
