Easy Spinach Dolmades

Ingredients

  • 1 tbsp olive oil
  • 1 None onion, finely chopped
  • 4 None garlic cloves, crushed
  • 7 oz ground lamb
  • 1 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1/3 cup cold cooked rice
  • 1/2 cup lemon juice
  • 1/4 cup chopped parsley
  • 1 tbsp chopped mint
  • 1 tbsp chopped dill
  • 24 None large spinach leaves, blanched, stems removed
  • None None Lemon wedges, plain yogurt and pita bread, to serve

Directions

    Heat the oil in a large skillet on medium-high heat. Add the onion and garlic and saute for 2-3 mins until tender. Add the ground lamb and spices and cook for 4-5 mins, breaking up lumps with a spoon. Stir in the rice. Set aside to cool.

    Stir in the lemon juice and herbs. Season to taste. Shape level tablespoonfuls of the mixture into log shapes, pressing together firmly. Place a log near the bottom of a spinach leaf. Fold over sides then roll up tightly. Repeat with remaining ingredients. Serve with lemon wedges, yogurt and pita bread.
