Easy Spinach Quiche

Ingredients

  • 1 (9-inch) deep dish unbaked pie shell
  • 1 tsp. soft butter
  • 1 pkg. chopped spinach, cooked and drained
  • 1/4 lb. shredded Swiss cheese
  • 4 eggs (Egg Beaters may be used)
  • 2 c. undiluted evaporated milk
  • 1/2 tsp. salt
  • pinch of sugar
  • nutmeg
  • coarsely ground black pepper

Directions

    Preheat oven to 350°; rub butter over bottom of unbaked pie shell.

    Combine eggs, milk, salt and sugar; beat until thoroughly mixed.

    Sprinkle pie shell with spinach and cheese.

    Pour milk mixture over spinach and cheese.

    Put a dash of nutmeg and pepper on top.

    Bake approximately 40 minutes on lower oven shelf until custard is set and the top is nicely browned.

    Serve as a luncheon or main dinner dish.
