- 2 c. half and half
- 4 whole eggs
- dash of salt
- dash of nutmeg
- 1 (10 oz.) pkg. frozen chopped spinach
- 6 oz. mild shredded Swiss cheese
- pastry to line bottom of 10-inch pie plate
Directions

1Prepare pie crust.

2Cook spinach according to package instructions.

3Drain and squeeze out moisture.

4(Dry spinach will be about the size of your fist.)

5Scald cream; cool.

6Place in blender with eggs, salt and nutmeg.

7Blend until smooth but not frothy.

8Place spinach over bottom of pie crust.

9Pour egg mixture over and top with cheese.

10Bake about 55 minutes at 300° or until knife inserted in center comes out clean.
