Easy Summer Chicken Bake

- 1 cup sliced zucchini
- 1 cup sliced yellow squash
- 1 cup cubed mango (frozen is fine)
- 12 cup raisins
- 1 teaspoon paprika
- 2 teaspoons ginger
- 1 12 lbs lean chicken breasts
- 1 teaspoon olive oil
Directions

1Pre-heat oven to 375 degrees F.

2Clean and slice into 1/2inch pieces the zucchini, squash.

3Chop the mango into similiar sized pieces.

4Clean chicken breast and poke holes in the flesh on both sides.

5Very lightly grease a 9x11 glass dish with the olive oil.

6Place chicken in pan and sprinkle 1 tsp of ginger and 1/2 tsp of paprika over the meat.

7Pile the zucchini, squash, mango, and raisin over the chicken evenly.

8Sprinkle remaining 1 tsp of ginger and 1/2 tsp of paprika over the veggies.

9Cover dish with foil and bake 35-40 minutes.
