  • 1/2 lb. oleo
  • 1 1/2 c. sugar
  • 4 eggs
  • 2 c. flour
  • 1 Tbsp. lemon extract or lemon juice
  • 1 can pie filling (blueberry, apple, raisins, cherry; almost any will do)

Directions

    Cream oleo well. Gradually add sugar and beat well. Add eggs, one at a time, flour and lemon extract. Grease jelly roll pan, 15 x 10 x 1-inch. Spread batter in pan. Lightly score into 20 pieces. Place 1 heaping tablespoon of pie filling on each square. Bake at 350° for 45 to 50 minutes. While still warm, sprinkle with powdered sugar.
