Easy Tomato and Basil Bread

Ingredients

  • 125 grams butter
  • 1 tbsp tomato paste
  • 2 tbsp brown sugar
  • 2 eggs
  • 2 cup plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 2 tsp dried basil
  • 1/4 cup tomato juice (or diluted tomato paste)
  • 1 cup shredded Cheddar

    Preheat oven to 180C

    Cream butter, tomato paste, brown sugar and eggs

    Sift together flour, baking powder and bicarbonate of soda; stir in dried basil

    Gradually stir in creamed mixture into dry ingredients with tomato juice; dough may appear wet and sticky.

    Fold in the shredded Cheddar

    Spoon into lightly greased 15x21cm loaf tin (I prefer baking paper)

    Bake in oven for 40-50minutes or until skewer comes out clean.

    Serve warm or cooled with soups, casseroles, et cetera
