Easy Vegetable Curry

Ingredients
- 1 Carrot, halved and sliced
- 1/2 Red Bell Pepper, cut into squares
- 1/2 Zucchini, halved and sliced
- 3 Spring onions, finely sliced
- 1/2 Red onion, chopped
- 1 tsp Ginger, finely chopped
- 1 tsp minced garlic
- 1 tbsp yellow currypaste
- 1 tsp garam masala
- 1 Peanutoil
- 1 Salt
Directions

1Preheat a pan on high heat, add some peanutoil and fry the ginger and the garlic for about one minute.

2Add all the vegetables and cook them untill they are tender.

3Add the currypaste, garam masala and a bit of water.

4Let cook for about 5 minutes on medium heat.

5Season with some salt and serve it with some jasminrice.
