- 1 lb. can crushed pineapple
- 3/4 c. sugar
- 2 Tbsp. flour
- 1/8 tsp. salt
- 1 c. dairy sour cream
- 3 egg yolks
- 1 Tbsp. lemon juice
- 1 baked pie crust
Directions

1Drain pineapple, reserving syrup.

2Combine sugar, flour and salt in medium saucepan.

3Stir in crushed pineapple, sour cream, egg yolks and lemon juice.

4Then add pineapple syrup last before starting to cook.

5Then cook over medium heat until mixture is thick.

6Cover and cool to lukewarm.

7Pour into baked crust and top with meringue.

8Brown at 325°.
