  • -2 handfuls spinach, arugula or similar green, washed

    Take all ingredients and line them up in the center of the tortilla, leaving about 1/2 of an inch of tortilla open on all sides. Fold in 2 opposite sides of the tortilla, and, holding the sides closed, roll up the tortilla. You should have a wrap with 2 closed ends. Cut the wrap in 1/2, so that the 2 closed ends have 1 open, 1 closed side. If you aren't serving immediately, wrap the wrap tightly in tin foil, and store for up to 24 hours.
