Ingredients

  • 1 stick margarine
  • 1 c. flour
  • 4 eggs
  • 2 boxes vanilla or chocolate instant pudding
  • 1 c. water
  • chocolate syrup
  • 3 1/2 c. milk
  • Cool Whip

Directions

    Bring water to a boil.

    Turn off heat and add margarine.

    When margarine has melted, remove from burner and add flour, using a wire whip to mix.

    Add eggs, one at a time.

    Bake in a greased 9 x 13-inch pan at 400° for 15 to 20 minutes.

    Eclair will puff up and then settle.

    Mix pudding with 3 1/2 cups milk.

    Beat 1 to 2 minutes and pour over shell when cooled.

    Spread with Cool Whip and drizzle with chocolate syrup.

    Refrigerate.
