Ingredients

  • 1 lb Shrimp (21 - 25 count per pound)
  • 1/4 cup olive oil
  • 3 tbsp. Butter ( clarified preferred )
  • 3/4 cup white wine ( or chicken stock )
  • parsley, chopped
  • 3-4 cloves garlic, minced
  • 1 small onion chopped
  • 1-3 cloves shallot
  • 1 tsp. Oregano
  • 1 tsp. Basil
  • fresh ground pepper
  • sea salt to taste

Directions

    1. In a large skillet ; Heat olive oil and saute onion, shallots and garlic 2-3 minutes. Then add oregano and basil saute 1 minute more.

    2. Pour wine or stock into pan and reduce ( 5 minutes ).

    3. Add shrimp and heat completely. Stir in butter and add parsley. Add salt and pepper to taste.

    4. Serve with pasta or over rice.
