Ingredients
- 1 lb Shrimp (21 - 25 count per pound)
- 1/4 cup olive oil
- 3 tbsp. Butter ( clarified preferred )
- 3/4 cup white wine ( or chicken stock )
- parsley, chopped
- 3-4 cloves garlic, minced
- 1 small onion chopped
- 1-3 cloves shallot
- 1 tsp. Oregano
- 1 tsp. Basil
- fresh ground pepper
- sea salt to taste
Directions

11. In a large skillet ; Heat olive oil and saute onion, shallots and garlic 2-3 minutes. Then add oregano and basil saute 1 minute more.

22. Pour wine or stock into pan and reduce ( 5 minutes ).

33. Add shrimp and heat completely. Stir in butter and add parsley. Add salt and pepper to taste.

44. Serve with pasta or over rice.
