Edamama Guacamole

Ingredients

  • 1 12 cups cooked edamame (or ready-to-eat refrigerated)
  • 2 small ripe avocados, peeled and pitted
  • 2 dashes dried chipotle powder (optional)
  • 1 jalapeno
  • 13 bunch cilantro
  • 14 cup onion, roughly chopped
  • 2 -3 limes or 2 -3 lemons, juice only
  • 2 -3 tablespoons water (optional)
  • sea salt
  • fresh ground pepper

Directions

    Put edamame, avocado, chipotle, cilantro, onion and juice in a food processor and pulse until almost smooth.

    Add enough water or extra juice to make a creamy consistency and pulse again.

    Transfer to a bowl, season with salt and pepper.

    Serve with pita chips, tortilla chips, carrots, celery.

    This also makes a good sandwich spread.
