Ingredients

  • 1 1/2 cups frozen shelled edamame (green soybeans)
  • 3 garlic cloves, peeled
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup fresh lemon juice
  • 3 tablespoons tahini (sesame-seed paste)
  • 2 tablespoons water

Directions

    Cook edamame in boiling water 5 to 7 minutes or until tender. Drain.

    Place garlic and next 4 ingredients in a food processor, and pulse 3 times or until chopped. Add edamame, cilantro, and remaining ingredients; process until smooth.
