Ingredients

  • 1 lb Edamame ( shelled )
  • 1 red bell pepper( sliced thin )
  • 1 yellow or orange bell pepper
  • ( sliced thin )
  • 1/2 c. cilantro ( chopped )
  • 1/2 tsp. chile pepper flakes
  • salt and pepper ( to taste )
  • Dressing : 1/4 c. rice wine vinegar ,1/8 c. canola oil
  • (1/4 tsp. sesame oil opt. )

Directions

    Blanche soy beans in boiling water for 5 mins. Chill.

    Add peppers , cilantro ,chile pepper flakes , salt and pepper. Toss with dressing serve cold.
