Ingredients

  • 8 hard-boiled eggs, chilled and peeled
  • 1/4 c. mayonnaise
  • 1/4 tsp. curry powder
  • 1/2 tsp. yellow mustard
  • 1 (10 1/2 oz.) can frozen cream of shrimp soup
  • 1/2 c. grated mild American cheese
  • 1/4 tsp. salt
  • 1 c. soft bread crumbs
  • 1 (8 oz.) can chopped mushrooms, drained
  • 1 (10 oz.) can cream of mushroom soup
  • 2 Tbsp. melted butter

    Cut the eggs in half lengthwise.

    Remove the yolks to a bowl and set the whites aside.

    Mash the yolks until they are the consistency of coarse corn meal.

    Add the mayonnaise, salt, curry and mustard.
