Egg Casserole

  • 1 1/2 lb. Monterey Jack cheese, shredded
  • 3/4 lb. fresh mushrooms, sliced
  • 1/2 large onion, chopped
  • 1/4 c. margarine, melted
  • 1 c. cubed ham or turkey
  • 7 eggs, beaten
  • 1 3/4 c. milk
  • 1/2 c. flour
  • 1 tsp. parsley
  • 1 tsp. seasoned salt

Directions

    Place half the cheese in buttered 9 x 13-inch pan. Saute mushrooms and onion in margarine until tender.

    Place over cheese. Place meat over mushrooms and top with rest of cheese.

    Beat eggs, milk, flour, parsley and seasoned salt.

    Pour over casserole.

    Bake, uncovered, in a 350° oven for 45 minutes.
