- 2 cans whole green chilies
- 1 lb. Colby cheese
- 7 eggs
- 1 small sour cream
Directions

1Slit peppers (scrape seeds out) and lay in the bottom of a 9 x 13-inch baking pan.

2Grate cheese and lay on top of peppers.

3Beat eggs with a fork.

4Put 5 heaping tablespoonfuls sour cream in eggs and beat with fork until mixed well.

5Pour on top of cheese and bake at 325° for 25 minutes.

6Check and if eggs are not done in the middle, bake for 5 minutes more.

7Salt and pepper top of eggs.
