- 2 eggs
- 1/4 c. sugar
- 2 Tbsp. sugar
- 1 tsp. vanilla
- 1 1/2 c. milk, scalded
- 1 (9-inch) pastry shell, unbaked
- nutmeg
Directions

1Beat eggs, sugar and vanilla together.

2Add scalded milk (scald means to heat milk just to the boiling point, but do not allow to boil).

3The pan used for scalding is easier to clean if rinsed out with hot water before adding milk.

4Blend milk into egg mixture.

5Pour into pie shell.

6Sprinkle with nutmeg.

7Bake at 450° for 20 minutes or until slightly shaky.

8Cool.
