- 2 tbsp. vegetable oil
- 3 Large eggs
- 1 c. bean sprouts, liquid removed
- 1/2 c. minced cooked pork (or possibly ham)
- 2 tbsp. minced onion
- 3/4 teaspoon salt
Directions

1Heat oil in 10 inch skillet.

2Beat Large eggs till thick and lemon colored, about 5 min.

3Stir in remaining ingredients.

4Pour 1/4 c. egg mix at a time into skillet.

5Push cooked egg up over pork with broad spatula to create a patty.

6Cook till patty is set; turn.

7Cook over medium heat till other side is brown.

8Serve with sauce (below) 2 servings.
