Ingredients

  • 2 tbsp. vegetable oil
  • 3 Large eggs
  • 1 c. bean sprouts, liquid removed
  • 1/2 c. minced cooked pork (or possibly ham)
  • 2 tbsp. minced onion
  • 3/4 teaspoon salt

Directions

    Heat oil in 10 inch skillet.

    Beat Large eggs till thick and lemon colored, about 5 min.

    Stir in remaining ingredients.

    Pour 1/4 c. egg mix at a time into skillet.

    Push cooked egg up over pork with broad spatula to create a patty.

    Cook till patty is set; turn.

    Cook over medium heat till other side is brown.

    Serve with sauce (below) 2 servings.
