- 1 (4 1/2 oz.) pkg. shrimp
- 1/2 tsp. lemon peel
- 2 Tbsp. lemon juice
- 1 c. canned bean sprouts
- 3 Tbsp. oil
- 1/2 c. diced celery
- 1/2 c. sliced onions
- 6 eggs
- 1/2 tsp. salt
- soy sauce
Directions

1Combine lemon peel, lemon juice, bean sprouts, celery, onions and shrimp.

2Beat eggs and salt.

3Add eggs to mixture.

4Fry in hot oil in skillet, 1/4 cup of mixture at a time, until lightly brown, turning once.

5Serve with soy sauce.
