  • 1 small zucchini, sliced

  • 2 cups Italian bread, cubed
  • 1/3 cup shredded low fat mozzarella cheese Target 2 For $5.00 thru 02/06
  • 1 cup cholesterol-free egg product
  • 3/4 cup fat-free milk

Directions

    Cook and stir onions, zucchini and red or green pepper in margarine or butter in skillet over medium-high heat for 4 to 6 minutes or until tender.

    Set aside.

    Mix bread cubes and cooked vegetables in greased 8 x 8 x 2-inch baking dish.

    Top with cheese.

    Mix egg substitute and milk in small bowl; pour over bread mixture.

    Bake at 375F for 45 to 50 minutes or until browned and knife inserted in the center comes out clean.
