- 2 cups Italian bread, cubed

- 1 cup cholesterol-free egg product
- 3/4 cup fat-free milk
Directions

1Cook and stir onions, zucchini and red or green pepper in margarine or butter in skillet over medium-high heat for 4 to 6 minutes or until tender.

2Set aside.

3Mix bread cubes and cooked vegetables in greased 8 x 8 x 2-inch baking dish.

4Top with cheese.

5Mix egg substitute and milk in small bowl; pour over bread mixture.

6Bake at 375F for 45 to 50 minutes or until browned and knife inserted in the center comes out clean.

7Garnish as desired.
