Eggless Coconut Cookies

  • 1/2 cup all purpose flour
  • desiccated coconut Powder 1/2 Cup
  • 1/4 cup sugar
  • 1/4 cup butter
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon baking powder
  • 2 tablespoons milk
  • 1/8 teaspoon salt

    Preheat oven to 180 degree C/375 degree F. Place a pan on over medium heat; add desiccated Coconut Powder and dry roast it for 2 minutes. In a mixing bowl, sieve Maida, baking powder and salt.

    In another mixing bowl, add butter and powdered sugar and mix it until gets light & creamy texture.

    Now add flour mixture into creamy mixture, mix it well and then add coconut powder.

    Now add Cardamom powder and milk 1 tbsp. at a time if require, add more milk to make soft dough.

    Wrap it with cling or wax paper and refrigerate it for 10 min. Take baking tray and grease it with little oil or ghee and place a parchment paper on it. Take out the dough from fridge and divide into 12 equal portions and make a ball, press it slightly with your palm to make disc shape. Make sure there is no crack. Place them on the baking tray spacing 1'' apart.

    Sprinkle some coconut powder on the top of cookies. Bake the cookies in the preheated oven on the middle rack for about 12 -15 min. Once bottom start turning brown take out from the oven and keep it aside for couple of minutes.

    Transfer the cookies to cooling rack. Coconut cookies are ready to serve. Store it in airtight container to keep fresh up to 2 -3 weeks. Trust me these Cookies will just melt in your mouth.
