Eggnog Cake

Ingredients

  • 2 c. all-purpose flour
  • 1 1/4 c. sugar
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 to 2 tsp. nutmeg
  • 3 eggs
  • 1 1/2 c. whipping cream (do not use substitute)
  • 2 to 3 tsp. rum or orange flavoring

Directions

    In order given, measure ingredients into large mixer bowl. Blend 1/2 minute at low speed and 3 minutes at medium speed.

    Pour into greased and floured 9 x 5-inch loaf pan.

    Bake at 350° for 60 to 70 minutes until toothpick inserted in center comes out clean. Remove from pan immediately.

    Serve with Fruit Sauce (recipe follows).
