Ingredients

  • 2 1/4 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 eggs
  • 1 cup eggnog
  • 3/4 cup sugar
  • 1/2 cup butter (melted)
  • 2 teaspoons vanilla extract
  • 2 teaspoons rum extract

Directions

    In a large bowl combine: flour, baking powder, salt, cinnamon & nutmeg.

    In another bowl beat the eggs, eggnog, sugar, butter & extracts; stir into dry ingredients until moistened.

    Pour into 3 greased 5 3/4 in x 3in x 2in loaf pans. Bake at 350 for 30-35 minutes. Cool for 10 minutes before removing from pans.
