  • 2 cups All-purpose Flour
  • 1/2 cups Sugar
  • 1 Tablespoon Baking Powder
  • 1/2 teaspoons Salt
  • 3/4 teaspoons Ground Nutmeg
  • 1/2 teaspoons Ground Cinnamon
  • 1-1/2 cup Eggnog
  • 1/3 cups Melted Butter
  • 1 Egg, Beaten
  • 1 teaspoon Pure Vanilla Extract
  • Cinnamon-sugar, For Sprinkling

Directions

    Preheat oven to 400 F. Grease 12 regular muffin cups.

    Place flour, sugar, baking powder, salt, nutmeg, and cinnamon in a large mixing bowl and whisk together well. Set aside.

    In a small mixing bowl, whisk together the eggnog, butter, egg, and vanilla.

    Pour the wet ingredients into the dry ingredients and stir just until the dry ingredients are moistened. Do not overmix. Spoon the batter into prepared muffin cups and sprinkle cinnamon-sugar over the top of each.

    Bake in the preheated oven for 16-20 minutes, or until a toothpick inserted into the center comes out clean.

    You could add raisins/golden raisins, dried cranberries, chopped toasted pecans, oats, or white chocolate chips.
