- 20 gingersnaps, crushed into fine crumbs
- 1 Tbs. butter, melted
- 4 medium pears, peeled, cored, and sliced
- 1 Tbs. finely minced fresh ginger
- 1 1/2 tsp. fresh lemon juice
- 1/2 cup sugar
- 2 large eggs
- 1 large pinch salt
- 1 cup nonfat evaporated milk
- 2 1/2 tsp. pure vanilla extract
- 1/4 tsp. ground nutmeg
Directions

1Preheat oven to 350F.

2Combine gingersnap crumbs and butter in bowl.

3Press into 10-inch pie pan.

5Increase oven temperature to 400F.

6Toss pears with ginger and lemon juice in bowl, then arrange in crust.
