- 2 eggs
- 1 c. sugar
- 1 c. dairy eggnog (not canned)
- 1/2 c. margarine or butter, melted
- 2 tsp. rum extract
- 1 tsp. vanilla
- 2 1/4 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
Directions

1Heat oven to 350°.

2Grease bottom only of 9 x 5-inch loaf pan. Beat eggs in large bowl.

3Add sugar, eggnog, margarine, rum extract and vanilla; blend well.

4Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan.

5Bake at 350°

6for 45 to 50 minutes or until toothpick inserted in center comes out clean.

7Cool 10 minutes; remove from pan.

8Cool completely.

9Makes 1 (16 slice) loaf or can be baked in two 5 3/4 x 3 1/4-inch loaf pans, greased on bottoms only.

10Bake at 350°
