- eggplant
- 1/4 c. melted butter
- 2 beaten eggs
- 4 Tbsp. flour
Directions

1Wash eggplant and cut in slices about 1/2-inch thick.

2Peel slices and cut in chunks.

3Boil in salt water until tender.

4Drain very carefully in sieve.

5It's impossible to get too dry.

6Mash well.

7To an average size plant, add a little melted butter (1/4 cup), 2 beaten eggs and 4 tablespoons flour.

8Mix well.

9Warm skillet and have melted butter in it.

10Drop little spoonfuls in and fry until brown on one side and turn like a pancake.

11When frying, sprinkle with salt and Accent.
