- 1 eggplant
- 1 c. boiling water
- 1 tsp. salt
- 2 Tbsp. butter
- 1/4 c. dried onion
- 2 c. soft bread crumbs
- 1 c. evaporated milk
- 1/2 c. buttered bread crumbs
Directions

1Peel eggplant.

2Cut into 1/2-inch pieces.

3Add water and salt. Boil until tender. Cook onion in butter until light yellow.

4Add eggplant, 2 cups bread crumbs and milk.

5Put in casserole dish and cover with buttered bread crumbs.

6Bake at 350° for 20 minutes.
