  • flour
  • eggs
  • grated cheese
  • parsley
  • basil
  • tomato sauce
  • grated cheese

Directions

    Peel and slice eggplant very very thin (less than 1/4-inch). Dip eggplant in flour, then egg mix (eggs, cheese, parsley and basil).

    Lightly oil a cookie sheet.

    Place slices on cookie sheet and bake in 350° oven for approximately 10 minutes, turn and bake 10 minutes.

    Remove eggplant and layer in casserole with tomato sauce and grated cheese.
