- 1 (2-inch) venison roast (about 4 lb.)
- 1/4 tsp. pepper
- 1/2 tsp. salt
- 1/4 c. flour
- 4 tsp. chopped celery
- 4 tsp. chopped onion
- 2 c. boiling water
- 4 Tbsp. vinegar
Directions

1Soak the roast overnight covered with water, 4 tablespoons of vinegar and 1 teaspoon of salt.

2Drain water off and rinse several times.

3Cover roast with flour generously and brown in fat on both sides; add remainder of seasonings and 3/4 cup of water.

4Simmer with lid on for 1 hour.

5Add remaining water; simmer until tender. You may have to add more water if it cooks out.
