  • 1 medium onion, chopped
  • 1/2 can tomatoes (with juice)
  • bacon drippings
  • about 1/2 c. crumbled cornbread
  • 1/2 c. grated cheese

    and tomatoes. Add bacon drippings to season. Mix cornbread and most of grated cheese and add to eggplant mixture.
