  • 1 small eggplant, aubergine
  • 14 1/2 oz diced tomatoes
  • 1/2 large onion, chopped
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp granulated garlic powder
  • 2 small red bell pepper, chopped
  • 2 tbsp ghee

Directions

    Heat the ghee add onions and peppers

    Peel and dice the eggplant
  3. 3
    When the onions and peppers are soft add the eggplant.

    Cover , and simmer 7 minutes.

    Add tomatoes, pepper, garlic and salt

    Simmer 10 minutes covered your done.
